Recipe Wednesday: Cream Corn Homestyle

Every good southern food lover has a special place in their heart for cream corn. After going to a new "southern diner" in town I was inspired to figure out a good ol' fashioned cream corn recipe...here it is, momma style.

2 cans sweet corn
1 pck cream cheese
1tsp sugar (more or less depending on your sweet tooth)
3 tsp milk or whipping cream
1/2 stick of butter
Salt and pepper to your liking

Throw all this in a pot and cook over medium until everything is melted, combined and hot. If you like your corn thinner, add some water.

Peanut Butter Melts

I'm late in my recipe this week and i apologize. We've had the nasty virus running around our house. Better late than never though and I've had lots of requests for this one.

I took this recipe from a series of books I'm reading by Joanne Flunke who writes about a woman who owns a cookie store. The protagonist is always finding dead bodies which intrigues me but the cookie recipes are even better!

Preheat the oven to 375.


2 sticks of melted butter
2 cups white sugar
2 tsp vanilla
2 Tbsp molasses
1 & 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup peanut butter
2 beaten eggs
2 & 1/2 cups flour

Add sugar, vanilla, and molasses to melted butter. Stir in baking soda, powder, and salt. Mix in peanut butter, eggs, then add flour and mix well.

Form into balls and bake 12 to a sheet for 8-10 minutes. Cool on the sheet for two minutes then completely on a wire rack.

Recipe Wednesday: Molasses Crackles

In addition to my daily prayers for parents to say with their children, I've decided to TRY to do a blogpost named Recipe Wednesday where I will post a different recipe each Wednesday.  We'll see how far this goes before I run out of recipes.  Today's recipe is Molasses Crackles and Mr. Man put it best when he looked over my shoulder as I typed this out and said, "mmmmm Molasses Crackles," in that deep throaty voice that says yum.  These cookies not only taste good, they keep fresh forever (upwards of 2-3 weeks) and you can freeze them for up to 3 months (good luck keeping them around for that long).


*Dough must chill at least 2 hours though overnight works also*
3 sticks of melted butter (yes that is what makes these so delicious)
2 cups of white sugar
1/2 cup Brer Rabbit Molasses (yes the brand makes a difference)
2 fork whipped eggs
4 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 tsp nutmeg
4 cups of flour

Place melted butter, sugar, and molasses in a Large bowl and mix.  Let the mixture cool slightly while beating the eggs.  Add eggs, STIR, baking soda, STIR, salt, STIR, cinnamon, STIR, and nutmeg, STIR.  Add 1 cup of flour, STIR, 1 more cup of flour, STIR, 1 more cup of flour, STIR, and 1 more cup of flour, STIR.  The dough will be very stiff so hunker down and put some elbow grease in that stirring.

Cover and Refrigerate

Preheat oven to 350.  Roll dough into balls and coat with sugar, then place on a GREASED cookie sheet.  Bake for 10-12 minutes.  Let cool a couple of minutes on the sheet and then completely cool on a wire rack.

Again, I warn you, these cookies are amazingly delicious and highly addictive.

Black bean and corn salsa

This is my brother's favorite recipe that I make I think although he loves my lasagna as well. I like to use this as salsa one night and a couple nights later use the leftovers as enchilada filling.

1 can drained and rinsed black beans
1 can of corn niblets
2 tbsp lime juice
6 tsp fresh minced garlic
1/2 cup chopped sweet peppers
1 jar of your favorite salsa (I use pace usually)
1 cup shredded Colby jack cheese

Mix ingredients. You may chill and serve cold or serve at room temperature. This keeps for a long time!
I also blend my salsa in a food blender because I like the smoother texture. I hope you enjoy!

Brownie Mix Cookies

I stole this idea from my mother in law who always has unique ideas for cooking! She used a recipe similar to this for my daughter's christening only it was red velvet cookies instead of brownies.

1 box brownie mix
1 stick softened butter
Half a package of cream cheese
1 egg

Mix ingredients with a blender until just blended. Don't over blend! Drop about 1 inch balls onto a cookie sheet. Cook for about 11 minutes. If you want you can top with cream cheese icing! They are easy and delicious. I made them for my co-workers on Wednesday and they were a huge hit!

Cheesy potatoes

It's been awhile since I posted a recipe so I thought it was time. This one is a family secret! Shhhh don't tell my aunt I'm leaking it our I'll be in trouble!

1 bag frozen potatoes
1 can cream of mushroom soup
1 container of sour cream
1 half a block of Velveeta
1 cup milk
Salt and pepper to taste

Melt velveeta and mix with milk, soup, sour cream, salt and pepper. Stir in hash browns and pour mixture into a 9 x 13 baking dish. Bake at 350 for about an hour.

Oatmeal Caramelite

This is the most amazing dessert brownie type thing. The recipe comes from my co-math teacher and every bite puts a smile on my face.

Combine
1 cup flour
1 cup oatmeal
3/4 cup brown sugar
1/2 tsp baking soda
1/4 tsp salt
3/4 cup melted butter
Press half of mixture into a 9 x 13 pan. Bake at 350 for 10 minutes. Melt a bag of Kraft caramels and 5 tablespoons of milk in the microwave...stir regularly. Spread over the mixture. Sprinkle 1 cup chocolate chips and 1/2 cup nuts over this and top with remaining crumbs. Bake 15-20 minutes longer.

Cream cheese roll-ups

So for the past three years I have been making these cream cheese roll ups for my co-workers. I got the recipe from a friend a long time ago. All of my co-workers have been asking for this one so here you go!

1 loaf sliced whit bread with no crusts (luckily now they actually make bead that you can buy that is crustless which saves a huge amount of time)
8 ounces softened cream cheese
1 egg
3/4 cup powdered sugar
1 cup sugar
2 tsp cinnamon
3/4 cup melted butter

*flatten bread with a rolling pin (this is great for working out frustration from the day)
*mix cream cheese, egg, and powdered sugar
*combine cinnamon and sugar and set aside
*spread 1 tablespoon cheese mixture on each slice of bread
*roll up
*dip in melted butter and cinnamon sugar mixture
*bake on an ungreased baking sheet for 20 minutes at 350.

Valentine's Dinner

So my husband did something tonight that he has never done for me before.  He made Valentine's Day dinner...from scratch using his own created/adapted recipe.  It was so amazingly delicious that I decided I had to share it.  We had steak, augratin potatoes (from a box), mixed vegetables, and corn bread (from a box).  Everything was scrumptious.  So here are the recipes:

 Andy's London Broil
 2 lb boneless Top Round Steak
1/4 C balsamic Vinegar
4 cloves of pressed garlic (his term was crushed but crushing the garlic sounded kind of violent)
2 T evoo (Extra Virgin Olive Oil...I think he's been watching Rachel Ray)
Salt and Pepper to taste (lots)

Mix EVOO, Balsamic, and Garlic
Poke steak with a fork on both sides a whole lot
Poor mixture over steak and flip it twice to coat the entire steak
Let sit for 1 hour in the fridge
Preheat oven to broil
Remove steak from marinade and place in a clean dish to broil
Shake generous portions of salt and pepper on both sides
Broil 7-8 minutes per side
Core temperature should be 130-135 degrees Fahrenheit
Slice thinly (1/4 - 1/2 inch) at an angle and serve IMMEDIATELY
Do Not offer steak sauce...it should be sumptuously juicy!!!
Might look something like this:

















Andy's Sauteed Crunchy Veggies
1 Cup Carrots
1 Cup Green Beans
1 Cup Sugar Snap Peas
3 T balsamic vinegar
1 T honey
1/2 tsp brown sugar
2 pinches of dried minced onion

All veggies must be fresh not canned
Cut veggies into bite size pieces and place in a saute pan
Mix balsamic, honey and brown sugar in with the veggies and saute on high until veggies are tender but NOT soft or mushy

So, feel free to try these recipes out and let me know what you think.  Of course, we thought they were delicious and I can't wait for my husband to cook them again!  I hope everyone had a fabulous Valentine's Day!  I love any reason to tell people how much I love them!
